Aka The Devil’s cupcakes/ Aka Ferrero Rocher filled temptation cupcakes
Back when we were training to be physicians, we would work with colleagues from every corner of the world. One of my closest friends came to Toronto to train and is now back in her native South Africa. Last week I needed a reminder of her and so I endeavoured to recreate the gourmet cupcakes she would bring to our resident room.
I’d long wanted to recreate these delightful morsels and finally found the time.
My friend calls these the Devil’s food cupcakes, and they are sinfully good.
Here is her recipe which had us on cloud nine.

Devils food cupcakes:
Ingredients:
2 cups flour
1 tsp salt (less if you use salted butter)
1 tsp baking powder
2 tsp baking soda
3/4 cup unsweetened cocoa
1 cup brown sugar + 1 cup sugar ( i only used 1/2 cup of Brown sugar and 2/3 of the white sugar)
1/4 cup canola oil
1/2 cup (113g butter)
1 cup hot coffee
1 cup milk
2 eggs
1 tsp vanilla
Instructions:
Beat the butter until light and fluffy.
Then add the sugar to the butter and beat.
Add the eggs one at a time and beat.
Add the milk and coffee to the butter mixture, then add the oil and vanilla
In a separate bowl:
Sift the flour and baking powder
Add the cocoa to dry ingredients
Add the salt to dry ingredients
Then add the dry ingredients to the wet mixture.
Last add the baking soda
Line a muffin tray or cupcake tray with cup cake liners (or make your own from parchment paper as I did..)
Fill 1/3 with mix.
Add a Ferrero Rocher to the middle.
Cover with mix but don’t fill more than 2/3 of cup.
Bake for 20 min at 180°C (350 F)
