Nonna’s Zucchini Cake

Here is a recipe that is a twist on your usual pound cake and yet remains easy to make. I obtained the recipe from my mother in law who makes this to perfection.

Ingredients:

2 cups of flour 

2 tsp baking powder 

1/2 tsp salt

1 and 1/3 cup of sugar 

2 eggs

1/2 cup vegetable oil ( I used canola)

1/2 cup buttermilk ( I used 1/2 cup of milk and 1 tbsp lemon juice)

Zest of 1 lemon

2 tbsp lemon juice 

1 grated zucchini 

Glaze 

1 cup of icing sugar 

2 tbsp lemon juice 

1 tbsp milk 

Instructions :

Mix flour, salt and baking powder in a separate bowl

In a larger bowl, start by beating eggs and adding sugar, oil.

Add lemon juice, buttermilk, lemon zest and zucchini.

Mix dry ingredients into wet.

Pour batter into pan ( with parchment paper or greased pan) 

Bake at 350 F for 40-45 min depending on your oven.

Add glaze once cake is lukewarm.
