Sometimes you just crave apple pie. With a nice glass of milk, or a scoop of vanilla ice cream. The trouble is, making crust from scratch is a bit of work and, well, sometimes I like having my pie and eating it to. So here it is, my version of no crust apple pie.
N.B. this is a modified ‘instant apple pie’ recipe from “Clueless in the Kitchen” – a book by Evelyn Raab that I’ve truly loved since my teenage years.

Ingredients:
4 large apples, peeled/cored.
1/2 cup of flour
2 Tbsp butter
1 tsp baking powder
1/4 cup of brown sugar
1/2 cup regular sugar
splash of vanilla
1 tsp cinnamon
1 egg
Instructions:
Peel, core and thinly cut apples and layer them into a 9 inch pan (buttered or lined with parchment paper). Add 1/4 cup of brown sugar and cinnamon directly onto the apples.
Mix butter with sugar, and add egg into mixture until smooth. Add vanilla, flour, baking powder and add mixture over apples.
Bake at 350 F degrees for 45 minutes or until apples soft/crust baked.
