One of my favourite parts of travelling is discovering new cuisines and dishes. New little hidden restaurants that string together in your memories of that trip. In the end, more so than all the pictures I end up taking, it’s those hidden gems, that burst of tomato sauce in the middle of the arancini you brought on the side of the road. That gelato with its fresh lemon zing that brings the vivid memories back to life.

It also means that even if you visit a place you’ve been before, your food experience will be invariably different and so will your trip.
